Stir Fry with beef and fresh coriander

Ingredients

200 g beef
soba noodles
2 teaspoons of finely grated ginger
2 cloves of garlic, finely grated
2 spring onions
chives
half of red pepper
large carrot
some broccoli roses
2 tablespoons of coconut oil
5 tablespoons of soy sauce
1 teaspoon of sugar
leaves of fresh coriander

Optional:

little chilli pepper
half of lime to serve





Recipe:

Let’s start with preparing meat which should be sliced in thin stripes. Beforehand put it in the freezer to make it easier. Only one hour will help. (Important: always cut the meat across the fibres, this will prevent meat from getting rubbery and hard). Choose your favourite noodles and cook it according to the recipe on the packaging. Our choice was soba noodles. Asian cuisine can't do without ginger, garlic and spring onions. That’s why we will also use those ingredients. Grate the ginger on a fine-mesh grater and squeeze garlic through a press. Cut the onions, peppers and carrots into thin strips. Split the broccoli roses into smaller pieces to fry them faster - you can also cut them.

Frying the ingredients will be perfect in a wok, but if you don't have one, use a large frying pan. Heat up the pan, then add 2 tablespoons of coconut oil and fry the ginger, garlic and spring onion. Fry shortly and stir often, onion should remain al dente. Next step is adding meat, which should be fried very quickly, 1 minute is enough.

Add vegetables: carrot, pepper and broccoli roses. If you like spicy dishes, add chilli pepper, noodles and mix it all together on the pan. At the end add soy sauce, sugar and chopped chives. Finish the dish with leaves of fresh coriander, which is an essential Asian cuisine ingredient. Serve with a quarter of lime which can sprinkled on the dish, for sour flavour. Enjoy!
